This 12-day itinerary connects Mexico City, Puebla, and Oaxaca through one of Mexico’s strongest culinary corridors, combining markets, hands-on experiences, and regional traditions. Designed as a highly sellable program for culturally curious travelers, it balances iconic sites with smaller, experience-led moments that add depth and differentiation. Rather than treating gastronomy as a series of restaurant meals, the itinerary uses food as a way into Mexican culture: street stalls in Mexico City, corn traditions near Cholula, mole in Puebla, mezcal and markets in Oaxaca, and artisan villages where craft remains part of daily life.

Day to Day Description
Day 1 – Arrival in Mexico City
Arrival into Mexico City, where guests are met and transferred privately to their hotel. The rest of the day is intentionally unstructured, allowing time to settle in, adjust to the altitude, or explore lightly at leisure. In the evening, a welcome dinner brings the group together in a setting chosen for consistency, atmosphere, and sense of place. It is a relaxed introduction to Mexico and to the journey ahead.
Day 2 – Mexico City Through Food and History
Guided exploration of Mexico City’s historic center, approached through both history and food. The route includes informal stops at long-standing street stalls and small kitchens, offering a practical introduction to the city’s everyday food culture. In the evening, the tone shifts to a more intimate experience with a guided chocolate and wine pairing, adding a quieter and more refined counterpoint to the morning’s street-level exploration.
Day 3 – Coyoacán and Xochimilco
Head south to Coyoacán, one of Mexico City’s most characterful neighborhoods. Visit Casa Azul with enough time to take in its context and atmosphere before continuing toward Xochimilco. The boat ride through the canals is paced as a cultural experience rather than a spectacle, offering insight into how this historic landscape continues to be used today. Return to the city in the afternoon, with the evening at leisure.
Day 4 – Teotihuacán from Above and Within
An early start for a sunrise hot air balloon flight over Teotihuacan, offering one of the best ways to understand the scale and layout of the ancient city. After landing, continue with a guided visit on the ground, paced to avoid the most obvious routes and provide stronger context. Return to Mexico City by early afternoon, with time to rest after the early start.
Day 5 – Corn Traditions and Puebla
Travel to Cholula for a hands-on experience centered around corn, the foundation of Mexican cuisine. Day 7 – Mole Workshop and Oaxaca
Begin the day in a traditional kitchen setting, working through the process behind Pueblan mole. The experience is small and personal, designed to show the time, technique, and complexity behind one of Mexico’s most emblematic dishes. Later, continue to Oaxaca, where the journey shifts again into a region known for its depth of culinary, Indigenous, and artisan traditions.
Day 8 – Oaxaca City and Mezcal
A walking exploration of Oaxaca begins in the morning, including time in the market where much of the city’s food culture remains concentrated. With the right pacing, the market becomes less overwhelming and more revealing. In the afternoon, visit a small mezcal producer for a focused tasting that goes beyond flavor, covering process, context, and the cultural role of mezcal in the region.
Day 9 – Markets, Cheese, and Monte Albán
Return to Oaxaca’s markets with a focused exploration of regional cheeses and locally sourced ingredients. A hands-on, informal experience at Paty’s home adds an intimate layer to the day. Later, visit Monte Albán, one of Mexico’s major archaeological sites. The site’s scale and setting speak strongly on their own, but timing and pacing help make the experience more meaningful.
Day 10 – Artisan Villages
Spend the day visiting artisan villages around Oaxaca, each known for a different craft tradition. These are working communities rather than staged visits, so the pace remains flexible depending on how each encounter unfolds. The focus is on process, conversation, and context: how materials are used, how techniques are passed down, and how craft remains connected to local identity. Return to Oaxaca in the afternoon.
Day 11 – Return to Mexico City and Evening Experience
Drive back toward Mexico City, with a stop en route in a lesser-visited botanical area that highlights the region’s more arid landscape. There is also an opportunity to taste ingredients not commonly found outside this part of the country. Back in the capital, the evening shifts tone completely with a lucha libre experience: theatrical, loud, funny, chaotic, and deeply rooted in Mexican popular culture.
Day 12 – Departure
Private transfer to the airport at the appropriate time. Depending on flight schedules, there may be time for a final coffee or short walk before departure. A straightforward close to a journey that covers significant cultural ground while maintaining a clear rhythm from beginning to end.
